The Story
of Sushitainable

It started with a journey—and a passion. During a visit to Los Angeles, we shared sushi with the legendary Kajiwara family, whose 100-year legacy in the art of fish inspired us to dream bigger. As we explored the sushi scene in the U.S., we saw the need for better quality, care, and authenticity. We were disappointed by the poor quality of sushi found in many supermarkets and restaurants. Visiting fish markets and wholesale companies revealed a troubling reality: fish was often handled carelessly, left out too long, and stored improperly. This not only diminished its taste but also reduced its nutritional value, highlighting the need for better practices. ​Interestingly, when people discovered we were Japanese, they often asked if we had seen the movie Jiro Dreams of Sushi. This interaction was eye-opening. It made us realize that along with sushi's growing popularity, there is a strong curiosity among Americans about sushi culture and the stories behind skilled sushi chefs. It also confirmed their desire for truly excellent sushi. Driven by our heritage and love for sushi, we founded Sushitainable to bring Japan’s unmatched sushi tradition to America. More than just delicious, our sushi tells a story of sustainability and craftsmanship, honoring the fish, the farmers, and the oceans that make it all possible."* We also aim to deepen people's understanding of the fish and all the other ingredients that go towards the art of sushi, inspiring a greater appreciation for their origins and craftsmanship. This passion led us to create the most sustainable sushi restaurant in the world, dedicated to preserving the fishing grounds where delicious fish thrive and ensuring they are passed down to future generations. Guided by the unparalleled knowledge and expertise of the legendary fish masters Kajiwara, we are committed to making this vision a reality.

Gotō enjoys an exceptional location for fishing, situated at the meeting point of the Tsushima and Liman Currents. This convergence creates ideal conditions for marine life, supported by pristine waters and one of the world's largest continental shelves extending into the East China Sea. These unique natural features make Gotō a truly remarkable environment for sustainable fishing.

A Zero Carbon Declaration Area

Gotō leads the way in environmental stewardship. As a Zero Carbon Declaration area, 80% of the island runs on renewable energy. This commitment to sustainability aligns with our vision: to harmonize exceptional sushi with responsible practices that protect our planet for future generations.

Fish Farm: Gotō Suisan, Inc.

At SUSHITAINABLE, we source most of our fish from Gotō Suisan, Inc., an offshore aquaculture company that takes full advantage of Gotō’s exceptional fishing environment. The fish at Gotō Suisan are raised with a focus on their natural biorhythms, mimicking human care. During hot summer days, feeding schedules are adjusted to cooler times, and the amount of food is tailored to match the fish’s appetite. To enhance the fish’s health, camellia leaves—a local specialty of Gotō—support intestinal regulation, ensuring the fish are free from any unpleasant odors. Additionally, flounder are cultivated using underground seawater enriched with natural minerals from spring water, producing fish of exceptional taste and nutritional value. The processing facility, located next to the fish farm, ensures the highest level of freshness. This facility operates sustainably, processing only the fish it receives and doing so immediately after they are harvested. State-of-the-art quick-freezing technology minimizes stress on the fish while preserving their natural freshness and quality. This careful process delivers authentic, Japan-quality fish to U.S. consumers, ensuring unparalleled flavor and nutritional integrity.

The legendary Kajiwara family boasts a 100-year legacy at Tanga Ichiba, Japan's oldest floating market, located in Kokura, Kitakyushu—a renowned sushi town with the highest fish consumption in Japan.
Kajiwara’s expertise has been the backbone of many top-tier sushi establishments, including Michelin-starred sushi restaurants in Kokura, the sushi capital of Japan. Their reputation for quality and their loyal clientele have cemented their place as a cornerstone of the industry.
As co-founders of Sushitainable Kajiwara combines a century of expertise with cutting-edge technology to bring authentic Japanese sushi to American consumers in an accessible and sustainable way.
